The Macallan has collaborated with El Celler de Can Roca to launch a new permanent dining experience at The Macallan Estate – TimeSpirit.
Together, the two have crafted a dining concept that is a culinary exploration and playful expression of The Macallan’s story as it celebrates ‘200 Years Young.’ A pinnacle of culinary excellence in Scotland, TimeSpirit pays tribute to the past and marks an exciting new chapter as The Macallan looks forward to the future.
TimeSpirit at The Macallan Estate marks the next chapter in The Macallan’s gastronomic journey and El Celler de Can Roca’s first dining concept outside of Spain.
Over three decades on from the creation of El Celler de Can Roca and inspired by a long-standing partnership of twelve years, The Macallan Estate was identified as the natural location for their international culinary venture debut.

Together with The Macallan, they have travelled through Scotland, understanding its culture, learning its customs and marvelling at its amazing produce. The Macallan and El Celler de Can Roca share a perpetual drive for innovation and commitment to the continuous growth and evolution of their shared journey. Together, they have crafted a culinary experience that is a collective expression of their playful spirit, creativity and respect for nature.
In collaboration with El Celler de Can Roca, The Macallan has crafted a unique dining concept and tasting menu of nine exceptional dishes. The tasting menu is a sensory immersion and artful articulation of The Macallan’s legacy, its dedication to mastery, community spirit and the natural world that surrounds us.
The finest local ingredients are sourced, taking inspiration from Scotland’s abundant natural larder. Each dish is curated with seasonal, local produce, either foraged from The Macallan Estate or sourced from local suppliers. As custodians of our precious land, The Macallan seeks to work in rhythm with the natural seasons.
Designed by award-winning architect, David Thulstrup, TimeSpirit is a space reimagined to create the ultimate gastronomic dining experience and immersion in nature at The Macallan Estate.
Showcase
The dining experience is centred around the kitchen, occupying the middle of the room which provides guests an intimate showcase of the creative culinary process. The abundance of natural light and the sweeping views onto the rolling hills of Speyside reflect inspiration rooted in nature.
Cost: The lunch tasting menu is £60 per person. The dinner tasting menu is £95 per person. You may choose wine or whisky pairings with lunch and dinner. Wine pairing is £55 (lunch) and £75 (dinner). For whisky pairings it’s £65 (lunch) and £95 (dinner).
From 31st October, TimeSpirit is open from Thursday to Saturday between 12:00-14:00 or 19:00-20:30, and on Sunday between 12:00-14:00.
TimeSpirit is fully booked until the end of February 2025. Reservations for March 2025 will be available from late November.
